The summer months are for fruity desserts on warm, balmy Sunday evenings. My family makes it a point to all sit down together on Sunday evenings for dinner. This dessert is perfect for following up the main course. Want to make it really great? A scoop of vanilla ice cream over warm blueberry boy bait is like hitting the jackpot.
Fresh blueberries are the way to go in the summer.
Blueberry Boy Bait Recipe
3 Cups All Purpose Flour
1/2 Cup Light Brown Sugar
1/2 Cup & 1/4 Cup Sugar (separated)
2 sticks of butter (or margarine)
1 Teaspoon Baking Powder
1 Egg (beaten)
1 Teaspoon Vanilla Extract
1/4 Teaspoon Salt
Juice from one lime
2 Pint Container of Fresh Blueberries
4 Teaspoons of All Purpose Flour
Confectioner's Sugar for dusting
Preheat oven to 375 degrees. Butter and flour a 9x13 pan.
In large bowl, whisk together 3 cups flour, light brown sugar, 1/2 cup sugar, baking powder and salt.
Cut in butter until mixture is in pieces no larger than a pea.
Mix in egg and vanilla extract. Dough will be crumbly, but stick together when pressed.
Pat 1/2 the dough into pan.
In another bowl mix remaining sugar, flower and lime juice. Add blueberries and gently toss to coat.
Pour blueberry mixture on top of dough in pan. Crumble remainder of dough evenly over blueberries.
Bake 45 minutes or until slightly browned on top.
Cool completely, then dust with confectioner's sugar, cut into squares and serve.
Don't forget the vanilla ice cream!
